How to use your Kamado-san

This guide will instruct how to make plain white rice using your Kamado-san—3 cups donabe. Please season your Kamado-san before first use. See the How to Season Donabe section.

Ingredients

3 cups (540ml, US 2 1/4 cups) short grain white rice

600ml (US 2 1/2 cups) water

Steps

Rinse and drain the rice.
Transfer the rice to your Kamado-san and add the water.


Soak for 20 minutes.


Kamado-san comes with an inner and outer lid. Position both lids so the holes are perpendicular to each other—align the inner lid holes with the handles, while the outer lid hole facing you.


Set your Kamado-san on the gas stove and turn to medium high heat.
Cook for 13-15 minutes. Steam will start puffing out of the hole 1-2 minutes before the rice is cooked.


Turn off heat and let it sit with the both lids on for 20 minutes.

Notes

  • To have a crispy bottom, cook the rice for 1-2 minutes more.
  • The ideal ratio for short grain white rice to water is 9:10. For 1 cup (180ml, US 3/4 cup) of rice, use 200ml water. Adjust the ratio to your preference.
