There is purpose in the dimple pattern of the Yukihira. The pan is intentionally hammered to increase the surface area for better heat conductivity—especially helpful when making soups and stews. Hammering also produces a metal that is more dense, boosting strength and durability so it can handle the day to day demands of most kitchens.
